Here’s a recipe for roast chicken with cumin honey and orange that I made last summer. It got buried in another post, so I’m reviving it and giving it it’s own post!
Roast Chicken with Cumin Honey and Orange
Roasted Chicken Marinade:
- 1 shallot, chopped
- 2 cloves garlic, chopped
- 1 tsp orange zest
- juice from 1 large orance
- 1 tbs cumin
- 1 tbs olive oil
- 2 tbs honey
Chop the shallots and garlic. Mix together with orange zest, cumin, olive oil, honey, and orange juice.
Put entire mixture in blender and blend until smooth (about 20 seconds).
I patted our chicken dry, placed it in a roasting pan, added salt and pepper, and then covered the chicken in the marinade.
We roasted it at 400F covered for 30 minutes and then uncovered for another 40 min. It wasn’t quite done so we kept it in a bit longer. For roasting times you can look up appropriate times and temperatures depending on the weight of your chicken.
I took the chicken out of the roasting pan and let it rest on a platter. Then, I poured all the liquid into a sauce pan and turned the heat up to high. I let the sauce boil and stirred constantly until it reduced by half (about 5 minutes).
Then, I poured the sauce back over the chicken and topped with some chopped cilantro.
Man oh man it was good!

- Mix shallots together with orange zest, cumin, olive oil, honey, and orange juice.
- Put entire mixture in blender and blend until smooth (about 20 seconds).
- Pat chicken dry, place it in a roasting pan and add salt and pepper.
- Pour marinade over chicken and cover roasting pan with aluminum foil.
- Roast at 400 F for 40-50 minutes, then uncover and roast for another 30-40 minutes. Cooking times will depend on size of your chicken.
- When chicken is done, remove the chicken from roasting pan and let rest on a serving platter.
- Pour juices from roasting pan into a sauce pan. Bring to a boil and then simmer until the liquid has reduce by about half (5 minutes).
- Pour sauce over chicken, sprinkle with cilantro, and serve.
