I’ve posted a lot about meal prep (and here, and here). I love to cook big batches of healthy food on Sundays, and eat the same thing all week. Lately, I’ve been doing a lot of roasted vegetable meal prep, and I’ve found that Kyle and I both love it! We enjoy having a huge bowl of mixed roasted veggies in the fridge all week long, so that we can use them as a side dish in a variety of meals.
Meal Prep Ideas
Some of my favorite foods to prep and make all week are:
My salsa chicken (easiest chicken ever, and is perfect over salads, beans, rice, or roasted veggies)
- Just put 1 jar of salsa + 1 packet of taco seasoning + 4-6 chicken breasts in the crockpot and cook on high for 4 hours, then shred the chicken.
Almond chicken tenders (super healthy and delicious)
Lasagna (it’s so easy to make a huge dish and eat it all week)
Stir-fry (all sorts!)
Jamie Eason Turkey Meatloaf Muffins– my #1 go-to of all time
Salads of all sorts (you can’t go wrong with salads!)
And finally…. Roasted Vegetables
Roasted Vegetable Meal Prep
This is the easiest, most delicious way to make sure you eat tons of veggies all week.
Roasting vegetables enhances their flavor and makes a perfect side dish to basically anything.
All I do, is cut up veggies of any and all kinds. Spread onto a baking sheet. Add some olive oil and spices. Then roast at 425F for 30-45 minutes. Make sure to stir every 15 minutes.
I have roasted pretty much every vegetable, and they are all amazing. If you aren’t roasting veggies on the regular, you will soon become a weekend roaster just like Kyle and me. We seriously do this every single weekend, and eat roasted vegetables all week.
