Carrot Salad with Tahini Lemon Dressing

This colorful salad is flavorful and super healthy! It's a great alternative to your normal lettuce based salads and makes a perfect side dish.
Ingredients
  • Ingredients:
  • 4 large carrots
  • 1 bunch fresh cilantro
  • 1 bag broccoli slaw
  • 1 red bell pepper
  • Sesame seeds (optional)
  • For the dressing:
  • 3 TBS tahini
  • 2 TBS honey
  • ½ lemon squeezed
  • ¼ cup olive oil (you can add more if it's too thick)
  • pinch salt
Instructions
  1. Use a vegetable peeler to slice your carrots into long strings. Keep the peels on because they have all the vitamins!
  2. Next, chop your bell pepper and add it to a large bowl with the carrots.
  3. Add a bag of broccoli slaw (or cabbage slaw would be delicious)
  4. Add 1 large bunch of chopped cilantro.
  5. To make the dressing, mix all ingredients by hand. I tried to make it in the food processor once and it turned out as hard as cement!
  6. Drizzle dressing over your salad and top with sesame seeds
