Carrot Salad with Tahini Lemon Dressing

- Ingredients:
- 4 large carrots
- 1 bunch fresh cilantro
- 1 bag broccoli slaw
- 1 red bell pepper
- Sesame seeds (optional)
- For the dressing:
- 3 TBS tahini
- 2 TBS honey
- ½ lemon squeezed
- ¼ cup olive oil (you can add more if it's too thick)
- pinch salt
- Use a vegetable peeler to slice your carrots into long strings. Keep the peels on because they have all the vitamins!
- Next, chop your bell pepper and add it to a large bowl with the carrots.
- Add a bag of broccoli slaw (or cabbage slaw would be delicious)
- Add 1 large bunch of chopped cilantro.
- To make the dressing, mix all ingredients by hand. I tried to make it in the food processor once and it turned out as hard as cement!
- Drizzle dressing over your salad and top with sesame seeds
