Korean Chicken Tacos

Chicken tacos with a spicy ginger, garlic, and lime twist!
Ingredients
  • 3 tablespoons soy sauce
  • 1 tablespoon fresh lime juice
  • 2 teaspoons packed brown sugar (honey would work too if you didn't want to use brown sugar)
  • 1½teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch
  • 1 teaspoon Asian chili-garlic sauce
  • 1 tablespoon olive oil
  • 1½pounds skinless, boneless chicken breast halves, cut into bite-size strips
  • 8 5 inches white corn tortillas, heated according to package directions
  • ⅓ cup snipped fresh cilantro
Instructions
  1. In a small bowl combine soy sauce, lime juice, brown sugar, ginger, garlic, cornstarch, and chili-garlic sauce; set aside.
  2. Cut chicken into thin strips.
  3. Heat olive oil over medium heat in a large pan. Add chicken and cook until just no longer pink.
  4. Add sauce and stir to coat chicken. Continue to stir and cook over medium until it has thickened and is bubbling.
  5. Top with fresh cilantro and serve!!
