Healthy Coconut, Chicken, and Vegetable Curry Recipe

Ingredients
  • 2 tablespoons olive oil
  • 4-5 tablespoons red Thai curry paste (start with 4 and add a 5th if you want it spicier)
  • 1 yellow onion, sliced
  • 4 chicken breasts, cut into cubes
  • Salt and pepper to taste
  • 2-3 cups broccoli florets (or one small-medium head of broccoli)
  • 2 cups chopped carrots
  • 1 red bell pepper, sliced
  • 2 teaspoon dried basil
  • 3 cloves garlic, minced
  • Zest of ½ lime
  • One 14-ounce can coconut milk
  • ½ cup chicken stock
  • One 14-ounce can tomato sauce
  • Lime wedges, for squeezing
