Healthy Coconut, Chicken, and Vegetable Curry Recipe

- 2 tablespoons olive oil
- 4-5 tablespoons red Thai curry paste (start with 4 and add a 5th if you want it spicier)
- 1 yellow onion, sliced
- 4 chicken breasts, cut into cubes
- Salt and pepper to taste
- 2-3 cups broccoli florets (or one small-medium head of broccoli)
- 2 cups chopped carrots
- 1 red bell pepper, sliced
- 2 teaspoon dried basil
- 3 cloves garlic, minced
- Zest of ½ lime
- One 14-ounce can coconut milk
- ½ cup chicken stock
- One 14-ounce can tomato sauce
- Lime wedges, for squeezing
