Roast Chicken with Cumin Honey and Orange

A sweet and flavorful marinade for this chicken makes it the perfect summer meal.
  • 1 shallot, chopped
  • 2 cloves garlic, chopped
  • 1 tsp orange zest
  • juice from 1 large orance
  • 1 tbs cumin
  • 1 tbs olive oil
  • 2 tbs honey
  • Cilantro for garnish
  1. Chop the shallots and garlic.
  2. Mix shallots together with orange zest, cumin, olive oil, honey, and orange juice.
  3. Put entire mixture in blender and blend until smooth (about 20 seconds).
  4. Pat chicken dry, place it in a roasting pan and add salt and pepper.
  5. Pour marinade over chicken and cover roasting pan with aluminum foil.
  6. Roast at 400 F for 40-50 minutes, then uncover and roast for another 30-40 minutes. Cooking times will depend on size of your chicken.
  7. When chicken is done, remove the chicken from roasting pan and let rest on a serving platter.
  8. Pour juices from roasting pan into a sauce pan. Bring to a boil and then simmer until the liquid has reduce by about half (5 minutes).
  9. Pour sauce over chicken, sprinkle with cilantro, and serve.
