- 1½ + 2 Tbsp. quick oats
- 1 cup shredded coconut, unsweetened
- pinch salt
- ½ tsp ground cinnamon
- ½ cup flour (oat, rice, spelt, all-purpose)
- 1 stick unsalted butter
- ½ cup packed light brown sugar
- ½ cup honey
- Melt butter in a sauce pan over low/medium heat and add in brown sugar and honey.
- Meanwhile, combine oats, flour, coconut, cinnamon, and salt.
- Add the butter mixture to the dry mixture and stir well.
- Coat a mini-muffin tin with non-stick cooking spray. Fill each muffin space with your mixture. Bake at 350F for 10-12 minutes or until golden brown.
- Allow to cool in the pan before removing. They pop right out once cooled.
