Potato Green Bean Tuna Salad

This is a refreshing, filling, summer said with so many great flavors, you will love it!
Ingredients
  • 5-6 small potatoes. Red-skins work, new potatoes, or try purple potatoes!
  • ¾ lb green beans
  • ½ small carton cherry tomatoes
  • 2 small cans tuna (I used 1 in oil and 1 in water, either work fine but using 2 cans in oil would be too oily.)
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • ¼ cup fresh chopped basil
  • ¼ cup fresh chopped parsley
  • 1 large garlic clove minced
  • salt and pepper to taste
Instructions
  1. In a large pot of boiling water, cook potatoes until soft- about 10 minutes.
  2. Remove potatoes from boiling water and add green beans. Cook 3-4 minutes until tender to your liking- for this recipe they are better a little crunchy. Drain green beans.
  3. Once potatoes are cool, chop into bite size pieces and add to a large bowl.
  4. Add green beans.
  5. Meanwhile, make your dressing by whisking olive oil, lemon juice, garlic, and salt and pepper together.
  6. Chop your fresh basil and parsley.
  7. Add herbs and dressing to potatoes and green beans.
  8. Next, cut tomatoes into halves and add those.
  9. Finally, add tuna (I chopped mine up on a cutting board before adding it in, just so I wouldn't have any big pieces I couldn't break up.
  10. Toss everything together. The longer it sits, the better it gets!
