I spent the majority of yesterday doing all the things I had neglected to do for the past week. See, when I’m studying for an exam, everything else goes on hold. Emails are left unanswered, mail left unopened, dishes pile up, laundry fills my room… you get the picture.
Funny how I can stop doing all those things but I still manage to have enough time to watch the Real Housewives of New York….
Anyways, I have a ritual of sorts after an exam that involves cleaning my house, organizing my room, returning emails, paying bills, making phone calls; I basically cross everything off the never ending list that started to form the week before my exam.
After feeling fresh and clean with all my to-do’s done, I relaxed, ate some dinner (my new favorite meal is turkey and egg whites scrambled on a tortilla with sriracha and broccoli) and had a very long internal argument about whether or not I should go to the gym.
The good, healthy Andrea won over the lazy, tired Andrea and I drove to the gym for a late night legs workout. I hit the stair climber for about 12 minutes to warm up, then I killed my legs with squats, lunges, leg extensions, and more. Finished up with a plank and 20 minutes on the elliptical. I was exhausted afterward and couldn’t wait for bed!
I’ve been doing the #plankaday that’s taking over instagram, and I must say, I am a major baby compared to some of these girls! My 2:30 plank had me shaking and sweating. Then I see someone post a picture of their 7 minute plank!! 7 minutes!! That’s bananas! I have a lot to work up to. How long can you hold a plank?
Today is my last day in the clinic and I’m both excited and sad. Excited to move on to a new rotation, sad because I truly enjoyed neurology!
Since I’ve been MIA for the week, I thought I should share with you my go to recipe for quick, healthy protein when I’m in a rush.
Turkey Meatloaf Muffins
These little muffins are portable, quick to make, and easy to freeze- everything you want in ‘exam week’ food. I’ve been eating them all week and it’s made packing lunch simple and quick. Just want you want when you’re rushing out the door to go study!
2 packages lean ground turkey (or ground chicken)
1/2 yellow onion chopped
3 stalks celery chopped
1 green bell pepper chopped
1 cup oats
2 egg whites
1 TBS dark chili powder
1 TBS garlic powder
1 TBS cumin
***Just throw in all the spices you have. I ran out of cumin and so I used a Mrs. Dash chicken seasoning and it was delicious. If you like them spicy, go heavy on the chili powder. Taco seasoning would be great in these too!
Mix all ingredients except turkey in a large bowl. Once spices, veggies, egg whites, and oats are fully incorporated, add the turkey.
Now you just have to get messy and use your hands to mix this together. There is no way around it. Over-working the turkey can make the muffins tough, so try to only mix it as much as you need to in order to get everything incorporated evenly.
Form into balls and place in muffin tin.
Bake for 20min at 350F or until muffins are done. Voila!!
