A few weeks ago, I saw a recipe for a spaghetti squash bake on Tara’s blog and I knew I needed to make it for lunch one week!
Tara made hers with Italian flavors, so I decided to take her idea and twist it a little into a southwest flavored dish.
It turned out to be a delicious, super healthy, easy to make dish that will serve me all week! Basically everything you want in a recipe. So, I had to share!
Southwest Spaghetti Squash Bake
- 1 spaghetti squash
- 1 onion
- frozen corn (frozen mixed veggies work well too)
- 1 package ground turkey
- 1 package taco seasoning
- 1 can black beans
- 1 jar salsa
- shredded cheese
Sauté an onion over medium heat until translucent.
Add in mixed veggies or just frozen corn until cooked through.
Add in ground turkey and cook thoroughly.
Mix in 1 packet of taco seasoning. Then add in beans.
Meanwhile, cook spaghetti squash (you can cook it in the microwave or in the oven).
Shred spaghetti squash and layer it in a large baking dish.
Top spaghetti squash with turkey and veggie mixture.
Next, cover meat and veggies with salsa.
Add shredded cheese on top and bake at 350 for 20 minutes until bubbly and golden brown.
This dish is super healthy and makes a ton! Perfect for packing for lunches or dinners all week long!
