Today is my first day of my LAST MONTH of intern year ever. I can’t believe it.
When I finished Cardiology 2 weeks ago and walked out of the hospital Friday afternoon, I had the strangest feeling knowing I was basically done with medicine forever. This month, June, is my elective month, and so I am doing ophthalmology… so really, it’s almost like intern year is already over. As I walked out of St. Mary’s (the hospital I work at most of the time) I kind of felt like crying, it was just a surge of emotions. This whole year has been such a marathon and it’s like I was looking down at the pavement as I was running these last few miles. When I looked up I was at the finish line and I hadn’t even realized it! I really feel so strange thinking about this year being over.
So you know that last week I was at home with my mom and step-dad. I had such a restorative, restful week, so I am feeling great today! I wanted to tell you about a delivery meal service we tried called Hello Fresh in case you were looking for a food delivery service to try.
Hello Fresh is one of those super popular and trendy services that provides food and recipes for you to make dinner for the week. You have to cook the food, but they send you the exact amount of every ingredient that you need, and they send you a detailed step-by-step recipe guide.
My mom and Joe had a box sent to them as a gift and since my mom doesn’t really like cooking, we decided to make all three of the provided dinners and sample them all! That way, my mom and Joe could enjoy leftovers without having to cook.
We both got to work in the kitchen, and were able to pull off all three recipes! I was so proud of us.
We made salmon with a cucumber, honeydew melon, and mint salsa, with roasted sweet potatoes and a watercress salad:
We made prosciutto wrapped chicken with spinach and cherry tomatoes plus a sage pan sauce:
And we made a veggie quesadilla with zucchini, kidney beans, tomatoes, and jalapeño peppers, with a lime crema on top:
I tried them all!
I honestly thought all three meals were delicious and it was super convenient having all the ingredients provided.
Kyle and I actually have a Blue Apron box coming in a week. My aunt sent it to us as a gift, so I’m excited to try it and compare the two services!
