On Sunday, Kyle and I went on a 22 mile bike ride! It was our first ride over 20 miles and both of us had spaghetti legs after we were done! But before we get to that, let’s start with breakfast.
I slept in on Sunday (glorious) and when I rolled out of bed, I was starving! So I quickly grabbed two protein blueberry muffins, some strawberries, and almond butter.
After some sustenance I could function, so I did some things around the house, answered emails, cleaned the kitchen- the usual Sunday activities.
By 11:30-ish Kyle and I were ready to go out on a bike ride, so I ate a Lara Bar just so I wouldn’t be starving on the ride. We were only planning on going about 10 miles, since that’s how far we went on Saturday and it was a nice ride.
But once we got going, we just kept going! We found a great trail in Rochester that doesn’t have too many people and very few intersections, which makes me feel a lot safer riding. Since I am a relatively new bike rider, I get so nervous when there are lots of cars.
We started at a slower pace, about 12 miles an hour, but once we got going, we sped up a little. We both want to get comfortable riding around at least 15 miles per hour or faster, but we are not quite there yet.
We stopped to check our distance and grab some water at mile 7.8. Since we were so close to 10 miles, we decided to keep going a little more and turn around at 10, making the ride a full 20 miles- our farthest ever!
But, we didn’t turn around until 11 miles! (this is all according to the GPS on my phone) so our total distance was 22 miles in 1:34.
We aren’t quite to the 15 mph speed yet, but we’re getting close and honestly, I was just proud of us for putting in the distance when we’ve never gone that far!

When we got home we were both STARVING so we quickly made lunch- which for me was the exact same as my lunch on Saturday- chicken, cheese, lettuce, avocado, and crackers.
For the rest of the day, I cooked lots of yummy food to eat for the week. I made egg salad with homemade mayonnaise (you MUST make your own mayo if you haven’t yet- it’s life changing!)
I made 4 salads with romaine, beet greens, snap peas, a homemade tahini dressing, and smoked salmon. I didn’t want the salmon juice to get the lettuce soggy, so I wrapped up each piece of salmon in tin foil before putting it in the salad tupperware.
Kyle has been on a pesto kick and has wanted fresh pesto all the time. So, I made a big batch using basil from my little plant that I bought a month or two ago. I can’t believe it’s still alive!
Seriously, nothing beats this flavor combination:
We bought some little red skinned potatoes at the farmers market, so I boiled them, sliced them, and fried them in my cast iron skillet until they were supper brown and crispy. Topped with pesto? Perfection.
After all that cooking I took my tired legs to bed. And that concluded my Sunday!!
