It’s Friday and I’m sharing my almond meal chicken nugget recipe! It’s going to be a great day 🙂
Have you ever used almond meal to bread chicken? It’s one of my go-tos when I need an easy lunch or dinner that I know is healthy and tastes great too. Almond meal, or almond flour is a coarse flour made of ground almonds and when used to coat chicken, makes a slightly crunchy, flavorful outer crust.
Until this week, I had only made chicken tenders with almond meal, but I decided to take it to the next level and make almond meal chicken nuggets. And I am so glad I did because they rock.
All week long, I’ve been eating my almond meal chicken nuggets on a salad for lunch. But, I think these would be great with lunch or dinner, or even as a little snack. They are so portable and bite sized, so they could go with anything!
If you’ve never purchased almond meal before, you can get all kinds of different brands in the flour section, and it’s usually around $10 for a bag, which is kind of expensive to me. Trader Joe’s has the cheapest I’ve ever found and it’s $5.99 or $6.99 for a bag- so if you have a TJ’s, go there. You can also often find it in the bulk section and that way you could only buy a cup or something if you didn’t know how often you would use it.
Almond Meal Chicken Nuggets
- 1 package chicken breasts
- 2/3 cup almond meal
- 1 TBS garlic powder
- 1.5 tsp salt
- 1 tsp pepper
- red pepper flakes (if you want a little heat)
- ***You could add any other herbs or spices here that sound good. Oregano would give it an Italian, pizza type taste, any of the Mrs. Dash spice blends would be good, sky’s the limit!
Cut your chicken breasts into 1 inch cubes. Add almond flour, spices, salt, and pepper, to a large plastic bag.
Place your chicken in the bag, seal it tightly, and shake until your chicken is coated evenly.
Spread chicken out onto a lined baking sheet.
Bake at 350F for 15 minutes, or until chicken is cooked through and almond meal is golden.
