Whoop it’s my day off!!!
We rotate in a 6 day schedule this month, so you work 5 days on, then get a day off. Yesterday I actually got off early. When it’s the day before your day off, you don’t have to admit patients, you just work on discharging the patients you’ve been caring for. My team of interns has decided to really try to get that person off as early as possible, because it’s SO NICE to have an afternoon before your day off!
I was not super excited about going into the hospital yesterday….
But the day actually wasn’t too bad. I dismissed 4 patients and my other 2 patients are going to surgery today, so I just got them all ready for that and I was done!
I saved my breakfast to eat at work, which was 2 of the mixed berry bars you see in the back of the picture. (The front of the picture are the sweet potato cookies.) These are a TIU Bikini Series recipe and holy moly they are delicious!
The bars are just almonds, oats, dates, protein powder, berries, and a little maple syrup. So easy to make and really really tasty.
For lunch I had another TIU recipe- this has become my favorite one ever. It’s called the “Root Down Apple Up” Salad. You can make it either with roasted beets or roasted sweet potatoes. The rest of the salad is just mixed greens, apples, and walnuts. The dressing steals the show though. It’s 1 TBS yellow mustard, 1 TBS whole grain mustard, 2 TBS honey, 1 TBS apple cider vinegar, 1/4 cup olive oil, and some salt. Don’t tell anyone I told you!!
In the early afternoon I left the hospital and ran to my car before anyone could page me and tell me to come back!
I made a pit-stop at our little health food store (looks exactly like Whole Foods) and then ran to Target to get some Mother’s Day cards- just in the nick of time!
I ate a sweet potato cookie in the car as I ran my errands. Another TIU recipe- another AMAZING one. Seriously I am so impressed with the recipes!
When I got home I was hungry for a snack so I melted some cheese on an Ezekiel tortilla and added some avocado. Perfect snack!
Then, it was time to workout. I told you I have not been consistent with my workouts at all. I don’t have some of the TIU workouts (I don’t want to buy the DVD because it’s pricey and I don’t have a TV in my room to watch it on) so I haven’t really been following the TIU Bikini Series workout plan too much. My GOQii coach Taarika really wants me to do more HIIT, which is actually very do-able since it’s only 10-20 minutes a day.
The problem is, I never want to do HIIT because it’s hard! I’m such a baby! So I’m going to make a huge effort to fit in 10-20 minutes of more intense workouts each day.

Taarika sent me a message and told me to try it, along with a Fitness Blender HIIT workout, so that’s what I did!
I chose a 21 minute HIIT from Fitness Blender that looked like this:
It was really good! Not terribly hard, but I was definitely panting by the end of it!
After my workout I made a smoothie with mango and banana, and topped it with some cashews and coconut. I am basically obsessed with this smoothie even though I used to hate mangos!
For my day off today, I’m headed to the grocery store, I’ll do some cooking, and I will definitely do a HIIT workout- I promise!!
