In the past few weeks, I’ve had a lot of people ask me to either do Youtube videos or make a blog post about meal prepping for the week.
I totally tried to film a video in my kitchen cooking up some of my weekly staples, but it was an epic fail. My kitchen is just not set up for filming. So, I am just going to gather some of my favorite recipes to share with you over several posts. This will be the first one!
I meal prep pretty much every week for several reasons. 1.) I love to cook and it’s fun for me. 2.) It’s healthier and tastier than what I could eat at the hospital (boring salad bar, dry sandwiches, or chicken fingers? No thanks.) and 3.) It’s faster to make a big pot of something to eat all week instead of cooking every day.
Here are some of my favorite big meals that last all week:
I love anything you can cook in the crockpot.
Perfectly portable. I’ve made these about 200 times. You can swap in different veggies and spices too.
These are crazy delicious and you can make a huge batch. I really need to make these again soon.
I lived off these salads during my ICU month as a 4th year in medical school.
Making separate baggies with greens, berries, and banana makes it so easy to dump into the blender with some protein powder and voila- breakfast on the go!
You can top this with grilled chicken, or more veggies, or have some pita or tortilla chips alongside- anything goes!
