I took a few days away from the blog to get life together and now I am back with a vengeance!
So let’s recap the weekend. I worked Saturday from 6-6, Sunday from 6-6, and Monday from 6-4:30. Getting out a little early on Monday was perfect because I was able to go out for a nice 4 mile run and enjoy the 60 degree weather!
Since Saturday, I’ve either had a smoothie, or plain greek yogurt (Fage is my #1 brand and I will be forever loyal) with strawberries, flax seeds, and peanut butter for breakfast.
I try to hold off and not eat breakfast until closer to 8 am because if I eat at 4 or 5 when I wake up, I will be STARVING by lunch at noon. Sometimes I grab a snack early in the morning and sometimes I can just hold off until closer to when rounds starts.
For lunch, I have been chowing down on huge salads! Now, something weird has happened to me recently. I normally do not care for mangos at all- like at all, at all. But when I was grocery shopping last Friday, a display of beautiful, ripe mangos caught my eye and I felt compelled to try them. And for some crazy reason, I loved them!
My salads have had mango, chicken, avocado, sprouts (home grown sprouts!) and salad dressing. Mmmmm Mmmmm. The mango makes it! Who knew taste buds could change so quickly and dramatically at age 26?
For dinner, Kyle and I have both been loving big stir-fry’s. I actually made a second huge stir-fry yesterday because neither of us were sick of them yet! I add onions, purple cabbage, mushrooms, red pepper, broccoli, carrots, water chestnuts, and bok choy to a huge pot and sauté. Add some chicken and scrambled eggs (plus some cashews on top) and you have a delicious meal! Kyle eats his with rice and I sometimes add rice and other times just eat it plain!
Try as I may, I cannot get myself to workout before work. I just hate it and I don’t want to. So there. But I was able to do a quick 20 minute run after work on Saturday.
I took Sunday off. Monday, I mentioned I did a 4 mile run outside which was lovely.
And yesterday, Kyle and I played tennis for an hour and a half! We rented the ball machine and hit with it for about an hour, and then played a game with each other for another 30 minutes. We had SO much fun. I’m still not very good but at least I can serve and hit the ball back and forth now!
I splurged and bought a new racket because they were on sale at the tennis club. My class instructor was there and he had recommended a few rackets to me in the past, so I asked him to help me pick one out since they had a ton of the demo rackets on sale for 50% off. They even re-wrapped the handle for me so now I’m good to go!
