Is the weekend really over? I had the best weekend hanging out with my mom who came to visit us, but now it’s Monday and she has to go home 🙁
On Friday afternoon, Kyle and I picked up my mom from the airport. We relaxed at home for a bit, and then ventured out to the grocery store to pick up some necessities for my mom and some ingredients for dinner. I had made a roast chicken with polenta and mushroom ragout for Kyle’s birthday on Thursday, and we had tons of leftover chicken, so we figured we could make more of the polenta and ragout and have the meal again.
I followed the recipe from Women’s Health and I would highly recommend making this easy but delicious and impressive dinner. The roast chicken turns out perfectly (you can’t go wrong with garlic and lemon) and then creamy polenta is a perfect base for the savory mushroom ragout.

After dinner we convinced my mom to watch Pitch Perfect- one of my favorite movies. She loved it!
Saturday morning we were up and enjoying coffee together as usual. My mom and I share a love for coffee and we often chat over our mugs in the morning, or in the afternoon when we need a pick-me-up. My mom’s coffee is kind of like a mom’s homemade cooking- nobody makes it like mom does- you know? She makes the best cup of coffee and it’s so comforting and wonderful to have it with her when she visits or when I come home. Should I break into song about coffee now?
On Saturday afternoon, I reserved a tennis court for the three of us so we could hit with the ball machine and try to play a game.
I warned my mom that I’m still pretty bad, but honestly I did okay enough to play some games! We had so much fun playing tennis with each other. Since my mom and Kyle both play really well, I’ve got a long way to go before I will be at their level, but I’m convinced that if I keep practicing I will get there by summer.
After tennis we took a little break at the house and then realized we needed to head to the grocery store once again to get some ingredients for dinner. I made oven roasted shrimp, marinated in soy sauce, sesame oil, garlic, and ginger. Kyle made spicy roasted broccoli and rice. Perfect dinner!
We even picked up some ice cream for dessert 🙂
Sunday morning, my mom and I decided to go explore Mayo while Kyle played some golf. It was unexpectedly warm (like 50 degrees!!!) and so we hardly even needed our jackets!
Our first stop was to pose with the Mayo Brothers. Then we tried to sneak into the Plummer Library, a beautiful historic library in one of the old Mayo buildings, but everything was locked 🙁
After exploring we came home for a quick lunch and then somehow my mom convinced us to go ice skating!
I wish there was an outdoor skating rink, but since it was so warm it would have probably been melted!
We found an indoor rink and skated around for a while.
There were so many little kids, I think we were all afraid we would slam into a small child, so it was a little anxiety provoking… but still fun!!
After ice skating my mom jumped on my treadmill to get a little more sweaty and I decided to run outside- it was so sunny and warm I couldn’t skip it!
I figured that all the snow on the trails would have been melted, but I was wrong. About 1 mile into my run, the trail was still covered in snow and I really didn’t want to run through that.
So, I turned around and looped through a few roads before calling it quits. By that time, my shoes were soaked from the melted snow so I was ready to be done. I only ran 2.5 miles in 25 minutes, but it still felt amazing to be outside in the sun. This entire week is supposed to be warm, so I am envisioning outdoor runs every day 🙂
To finish off our fun Sunday, we went downtown to a restaurant called Mango Thai for dinner. Kyle got Pad Thai and my mom and I split spring rolls and a ginger black bean chicken dish that was outstanding.
And you know I can’t skip edamame. I don’t know what makes it so delicious- but I love it!
And that was our weekend! I’m so sad that my mom is leaving today 🙁 but we had a wonderful few days together! (and praise the pager angels because I didn’t get called into work!!)
