My wonderful husband turns 30 on Thursday! We started the celebration on Saturday with dinner and a Timberwolves basketball game in Minneapolis. But before we get to that, let’s start at the beginning of the day.
Saturday was my first official day of float month and let me tell you- sleeping in and not worrying about work was glorious. After a rough day on Friday, I was really looking forward to a day off. I leisurely got up that morning and made myself a smoothie and a piece of toast for breakfast.
This smoothie had frozen mixed berries, kale, chia seeds, some coconut, almond milk, and protein powder- filling and delicious!
Later on in the morning, I thought about going to the gym to workout, but then decided to stay in the warmth and comfort of my home by running on my treadmill. I am telling you, since I got my treadmill for Christmas, I have be gone to the gym twice I think. It’s just so inconvenient to get all dressed up, park, walk in, get a locker, get a towel, untangle my headphones… staying at home is so easy!! This month I am committing to go to the gym way more okay?
Anyways, I started by walking for 5 minutes, and then ran 3 miles, and then walked 5 more minutes at the end. It felt great!
After the treadmill, I did a total body workout in my room with dumbbells and a stool. One of my gorgeous readers, Lisa sent me some of the Kayla Itsines workouts (thanks girl!!!) and I must say, they are pretty great! They are all circuit formats and take around 30 minutes. You can find a ton of her workouts online- here is a pic of a similar one to what I did.
It ended up being a great workout!
After my workout it was time to get ready to go to Minneapolis.
I love having the city so close (it’s about 1 hour 15 minutes away) and we always say we will go there all the time for date night, but with busy residency schedules it’s hard to make that actually happen. So this was the perfect excuse for a date night in the cities.
We started at Restaurant Alma, a James Beard winning restaurant and nominee this year.
The restaurant specializes in three course tasting menus, so that is exactly what Kyle and I ordered.
We started with warm, homemade bread and homemade rosemary crackers that were outstanding. I need to figure out how to make those crackers! They were so crunchy and buttery… mmmmm.
For our first course, I chose a roasted brussels sprout salad. The brussels were served on top of house-made ricotta which was light and creamy. Pan-fried prosciutto and a black truffle-walnut dressing gave the salad richness, but there was a subtle tanginess, almost like vinegar, which lightened it up (I think it was the truffle oil).
Kyle ordered the endive and smoked potato salad which was served with cornmeal crusted sweetbreads and cayenne hollandaise. Those potatoes were so flavorful and the endive gave the salad a little crunchy bitterness that was perfect.
For our second course, I opted for quail with crispy saffron rice, artichokes and pomegranate. The quail was so tender and the crispy saffron rice- I could have had an entire bowl of that!
Kyle ordered Beef Agnolotti with leeks, sage butter, hazelnut and parmesan. The homemade pasta was reminiscent of little raviolis. His dish was decadent to say the least, but wasn’t overwhelming. I loved the crunch of the hazelnuts over the buttery pasta.
For the third course, I chose a mahi mahi dish with roasted sweet potatoes, shiitake mushrooms, and paprika-sherry sauce. The fish was flakey and cooked perfectly, with a nice crisp on the outside. I never would have paired sweet potatoes with mushrooms, but the paprika sherry sauce tied everything together perfectly. This was my favorite dish by far.
Kyle had sea scallops served on a bed of kale with grapefruit and chickpeas, and harissa which is a hot chili paste.
He loved the sweet, tangy grapefruit and how it complemented the spicy sauce with the scallops.
After all that we were too full for dessert, but the waitress brought us little coconut meringues and a candle for Kyle.
We rushed to the basketball game after dinner and arrived a little late, but didn’t miss too much. The Timberwolves played a great game but ended up losing by 3 points. Oh well.
I fell asleep in the car and made the birthday boy drive home that night. Sorry Kyle! His birthday week is just beginning and it is off to a great start so far!!
