Happy Friday! I’ve been doing the “Friday Favorites” posts for you guys, but sometimes it is hard to come up with enough new and exciting favorites to share. So, I might have to cut back on the amount of “favorites” and just incorporate a few into each week… or I need to start trying more new things!

Also, I’m recapping my weekly workouts each Friday. We will start with last Friday:
- Friday: Super short 15 min HIIT- sprinting on treadmill
- Saturday: Walked 4.2 miles on treadmill on incline
- Sunday: 2 mile jog + 7 min Scientific Workout
- Monday: OFF (post call and TIRED!)
- Tuesday: 3 miles run + 1 hour yoga at home
- Wednesday: Tennis class
- Thursday: 1 hour Tennis with ball machine
No plans yet for today. I got called into work, so I have no idea how long I’ll be working.
Now onto a few favorites from this week:
I have been looking for a good spring jacket, one that is not too heavy but still somewhat waterproof and can break the wind. I really don’t have any good spring coats besides a black trench, which I feel looks too dressy sometimes.
I stumbled upon this beauty in the kids section of Gap and luckily they had an XL left on the rack. Bonus- it was on sale for $19.50! I couldn’t pass it up 🙂
This seitan, which is a vegetarian product made from wheat has been one of my favorites for a LONG time. I stopped buying it for some reason and forgot how much I love it! It is so delicious scrambled into eggs because it adds some great spicy flavor and texture. Plus, it’s high in protein and low in calories, so it’s easy to add it into a meal to up the protein content!
Yesterday I had scrambled eggs, broccoli, and seitan for dinner and it was so tasty 🙂
I MISS YOGA! I can feel myself getting stiffer and less mobile by the day! Honestly, one of my favorite things about yoga was how it made my body feel so loose and flexible. I could sit in weird positions, hang out on the floor, reach or stretch to pick things up, and I never felt tight or had pains. Since I am not a very flexible person by nature, yoga really helped my body and I can feel a difference since I haven’t been practicing regularly. So, I am going to make an effort to do yoga more, and to stretch more during the day.
Yesterday I did some stretches while I worked on the computer. That was a pretty easy way to work on flexibility!
So that pretty much exhausts all my “favorites” this week. But I do have a few more things I can share! Yesterday, I went to the indoor tennis courts and rented the ball machine so I could practice by myself. It’s the first time I’ve gone by myself since I normally go with Kyle or I go for my weekly class.
I programed the ball machine to hit the balls on alternating sides of the court so I would have to move around a lot to hit the balls, and so I could alternate hitting forehand and backhand.
It was a workout!! I was huffing and puffing and definitely sweating by the end of my hour. I am still taking my once a week beginners class, and plan to just keep going with that indefinitely. It is such a fun sport so I’m excited that I’m getting into it even more! Plus- when it gets warmer I can buy lots of cute tennis skirts right?
Yesterday was a day of eggs for me. Besides the eggs with seitan I mentioned above, I also had an egg scramble for lunch. This time it had mushrooms and sweet potatoes. Eggs are just so easy!
And, in an effort to stop eating so much sugar, I made a smoothie for dessert last night with frozen mixed berries, cocoa powder, and almond milk. It really tasted like chocolate covered raspberries and was so thick it was almost like sorbet. I topped it with a little almond butter and it was so tasty!

And last but not least, Go BUTLER! I love March Madness and I especially love it when Butler wins 🙂 I posted this throwback yesterday on Instagram. This was during my senior year of college when Butler played Duke in the national championship. Repeat this year? (No idea who the random guy in the back is…)
