Can’t talk long because I have to leave the house before 6 am to start my month of medicine today. I’m trying to think positively… but I don’t expect this to be the best month ever. I am going to focus on really getting into a routine though- studying in the mornings, blogging and working out after work- we shall see.
Yesterday I drove up to Minneapolis to get my hair done! It’s such a change- back to blonde!- and I can’t wait to show you guys!
Before I left I made a snack of the strawberry rhubarb Noosa yogurt + some real strawberries and almonds. I know I’ve talked about this yogurt about 17 times, but seriously try it because it is so good!
Earlier in the morning I had a smoothie for breakfast and decided to use egg whites for protein instead of protein powder. This cup had 3/4 cup egg whites, 1/4 cup almond milk, 1 cup kale, 1 cup frozen mixed berries, 2 TBS PB2, and some flax seeds (plus a spoon full of peanut butter on top that I didn’t mix in). The egg whites do make it a little different, but not bad. For 20 grams of protein without any additional ingredients that you find in protein powder, it’s hard to beat!
I think I will try it a few more times before deciding which I like better.
By the time my hair was finished, it was 1:30 and I was starving, so I drove the extra 4 miles into Minneapolis to stop at Whole Foods for lunch. The Minneapolis Whole Foods is a really good one, so I was excited to stop and browse before picking up a smorgisbord of salad and hot bar items.
I was also coaxed into trying this hemp milk because the nicest lady ever was sampling them along with a few different green juices. You all know I LOVE green juice so I immediately gravitated toward that, but when I tried this hemp juice I was intrigued. It only has 5 grams of sugar for the whole bottle unlike green juice which has like 25 g. So, I added it to my cart!
Later on yesterday afternoon I warmed up for 2 miles on my treadmill while watching the rest of Dancing With The Stars. I thought Allison and Riker were so good! I love her so I hope they stay in it. Rumor is my other favorite- that girl is intense!
Ever since hot Core Power Yoga in Seattle, I’ve been craving more yoga, so I did a 30 minute PopSugar yoga routine which was actually pretty perfect. It was fast paced and included everything I like in a yoga session: some sun salutations, a quick warrior flow with some balances, ab work, and stretching.
Several days ago, I made a massive stir-fry with carrots, red peppers, broccoli, bok choy, purple cabbage, onions, mushrooms, and water chestnuts. I cooked the veggies with a seasoning/saucy mixture of fresh ginger, garlic, soy sauce, sesame oil, and chili sauce. Then, I cut up chicken breast and marinated it in the same sauce before cooking it on the stove. I topped it all off with 3 scrambled eggs and made some rice on the side for Kyle.
For such an easy, veggie-filled, nutritious meal, it sure is tasty! I love stir-fry and always forget how perfect it is for making a huge batch of something healthy and delicious. Looks like that’s what I will be eating all week!
