I can’t believe it’s Wednesday already and I haven’t even recapped the weekend… sorry!!
I normally get Saturdays off during this months rotation, but this past weekend was my golden weekend which means I got both Saturday AND Sunday off- score!!!
After work on Friday, Kyle and I made a quick run to the grocery store. We were totally out of food and didn’t feel like cooking, so we picked up a rotisserie chicken, some asparagus wrapped in bacon that was pre-made at the meat counter, and a sweet potato. After cooking the asparagus, we had dinner made!
Later on Friday night, I left Kyle and went to a girlfriend’s apartment for a pre-Valentine’s Day girls night. Picture 12 girls (all doctors I might add), drinking wine, eating cookies, making Valentine’s day cards with glitter glue, and laughing hysterically. That was Friday night 🙂
On Saturday, Kyle slept in and I made a run to the grocery again to pick up supplies for Valentine’s dinner.
I only did a quick workout on my treadmill Saturday because I had to get cooking!!
I made cornmeal and herb crusted Atlantic cod (which was seriously so amazing- I forgot how flakey and buttery cod is!)
I roasted some asparagus and served it alongside some angel hair pasta with fresh grated parmesan for a side dish.
And, I made this watercress and avocado salad which was super super yummy. The dressing was really onion-y, but still really good!

But my favorite part of dinner was dessert. I made a chocolate cake and it was everything you want a chocolate cake to be.
I’ve had cake every single day since Saturday and thank goodness it’s all gone now because I would just keep eating it 3 times a day.
Kyle got me the sweetest card, flowers, chocolate, and a gift card for a facial- best husband ever right??
Since Saturday was a day of eating, Sunday was the active day. Kyle and I woke up early and left to go cross country skiing.
The snow was slipperier than it has been the last few times we’ve gone, so I thought it was harder. And, I got a wicked blister from the ski boots!!
I wore my heart rate monitor just to see how many calories we burned. After an hour of sweaty skiing in the freezing cold, we burned 500 calories- not too shabby!!
After skiing we went to the grocery AGAIN (third time that weekend) and got food to make for the entire week. We made turkey chili and a crockpot barbecue chicken dish that should last all week.
After cooking I met a few friends to play tennis on Sunday night. We are all taking the beginner tennis class on Wednesday nights, but decided to get together and play on Sunday. I am getting better, but still pretty bad. Half the time I hit the ball like this:
But at least I’m trying!!
And that was the weekend!
