I had the past THREE, yes three days off from the emergency department and let me tell you- it was awesome.
Before my little holiday, I was totally out of food. I had a few dinners at work that looked like this:
Random sweet potato and avocado.
Greek yogurt and blueberries.
(Those are my notes in the pictures but absolutely no patient information 🙂 )
Luckily, with my days off I had plenty of time to make several super yummy dishes. I will share all those recipes with you next week.
One easy one with no recipe required is this ham and bean soup.
I bought a 32 bean soup mix in the bulk section of our local grocery shop that’s similar to Whole Foods. Sauté some onions, carrots, and celery until just soft. Then add to a crockpot. Add bean mix and chicken stock (I used homemade) to fill the crockpot. Finally, add in a smoked ham shank. Set the crockpot on high for 5-6 hours until the beans are soft. Then take out the ham shank and shred the meat off and put the meat back in the soup. Throw out the bones and the fat. Voila! SOOOOO good! Seriously so good.
Monday I took the day off from working out. I grocery shopped, cleaned the house a lot, took a few naps, worked on the blog a lot, and cooked.
Tuesday I started my workout with a 1 mile walk on the treadmill at the highest incline (10 on my treadmill). I haven’t done an incline walking workout in forever and let me tell you- just that one mile on a steep hill gave my calves and behind a nice burn!
Then I did two separate Daily Burn workouts. I mentioned last week that with Hulu you get 30 days of Daily Burn for free, so I have been trying out several of the workouts.
The first one I did was only 15 minutes but it was tough! After a warm up we did one minute each of 3 exercises, for 3 rounds:
- Stability ball plank pike x 1 minute
- Lateral lunge with dumbbells- arms raise in the front during the lunge x 1 minute
- Plank to squat x 1 minute
Repeat circuit x 3
After that tough 15 minutes I did one more 15 minute workout that was only cardio. I’d say that was a decent 45 minute workout!
On Wednesday my workout was my first tennis class. A few months ago I did a 5 week beginner tennis class. I planned to keep on taking the class every 5 weeks but I was out of town during the beginning of December and would have missed the first 2 classes. So, I skipped the lsat 5 week class and signed up for the next one. We meet once a week for an hour and do various drills and practice different swings.
I am still SO bad at tennis but I really enjoy the class and for only $10 a class- I don’t think you can beat that!
And there you have it. I’m off to work again today- only 2 more shifts left in the emergency room until this month is over!
