I think I how I ate on Christmas Eve is the way I want to eat on the last day of my life.
It started with breakfast- eggs, bacon, avocado toast, and tomatoes.
I was supposed to have both Christmas Eve and Christmas off from work, but since I got called in the day before, I was nervous I would get called in again. By 9pm on Christmas Eve Eve, I hadn’t been called, so I felt pretty confident that I at least had the 24th off. But I still wasn’t so sure about actual Christmas. So, Kyle and I decided to make our big Christmas dinner on the 24th in case I had to work on the 25th.
Kyle’s parents sent us steak and lobster from Omaha steaks to cook for our Christmas dinner (such a wonderful gift! Thank you guys!). So, early in the day, we set the table and started to think about how we would cook dinner.
Kyle was in charge of the lobster and I was in charge of the steak. I decided to start the steak on the stove in a hot cast-iron skillet, and then finish it in the oven. Kyle originally planned to broil the lobster, but after some googling he decided to butter-poach it. Not the easiest way to cook lobster, but he was determined!!
He de-shelled the lobster tails and skewered them so they wouldn’t curl as they cooked.
I set out the steak to come to room temp.
Kyle got started roasting broccoli while I made a quick run upstairs to do 3 miles on the treadmill and then shower and get ready.
We both decided to get dressed up- it was Christmas after all!
Kyle focused on the lobster and poached it perfectly!! The butter poaching is definitely the way to go-
I sautéed some mushrooms and onions to serve on the side.
After the steak was done cooking in the oven, I let it rest with some butter on top. I think the theme of the dinner was butter.
And then it was time to eat!
What a treat!! Dinner was incredible and so special- our first Christmas dinner as a married couple!
For dessert, we baked homemade chocolate chip cookies and served them with vanilla ice cream- my idea of the perfect dessert.
After dinner we each opened one present before rolling our stuffed selves to bed 🙂

It was the yummiest day and even though we missed our families, we loved our first Christmas together 🙂
