This salad is SOOOOO good. SO so so so good.
I made a HUGE batch of it last week and ate it all week long. I also cooked up some chicken in the crockpot and shredded it, so I could top the salad with shredded chicken, which made it the perfect meal!
- 1 package of Asian salad mix (cabbage, carrots, celery, etc.) –> I bought mine at Costco!
- 1 head purple cabbage
- 1 cup chopped cilantro
- 1/2 cup honey or maple syrup ( I used half and half because I ran out of honey and it tasted great!)
- 1/2 cup olive oil
- 1/2 cup rice wine vinegar
- 1/4 cup soy sauce
- 2 TBS sesame oil
- 2 TBS peanut butter
- 1 TBS sriracha (add more if you like it spicy!)
- 1 TBS fresh ginger
- 1 garlic clove
- Cashews to top
Chop up your cabbage, cilantro, and mix it all together with your salad mix.
(I skipped the dressing that came with the salad but still added the toppings)
Add all the dressing ingredients to a blender and blend until garlic and ginger are thoroughly blended.
Pour dressing onto salad, top with some cashews, and devour 🙂 Nom nom nom!
