One of the big recipes touted by the Whole30 is homemade mayonnaise.
I’ve never really been a huge mayonnaise fan, although I don’t mind it in small quantities on sandwiches or in salads like tuna or egg salad.
But, since everyone who has Whole30’d and made mayonnaise raves about it, I thought I would give it a try.
I followed the recipe on the Whole30 website to the tee.
And my verdict?
Holy mayonnaise! This stuff is GOOD!!! I could eat it straight with a spoon!! And I never would have said that about regular mayonnaise.
Homemade Mayonnaise
Ingredients:
- 1 egg
- 1 and 1/4 cup oil, divided *******the type of oil you use is important. DO NOT use extra virgin olive oil. It has too strong a flavor. Use safflower oil, sunflower oil, or extra-light olive oil.
- 1/2 tsp mustard powder
- 1/2 tsp salt
- 1/2 lemon juiced
Directions:
Make sure all your ingredients are room temp. If your egg isn’t at room temp and you don’t want to wait, you can put it in a cup of warm water for 3 minutes.
Put your egg, 1/4 cup oil, mustard powder, and salt in a blender or in a bowl if you’re going to use an immersion blender, or in a food processor.
I used this kind of oil and it was pretty darn good!
***I’ve made this twice now- the first time I used my Vitamix and it was hard. The second time I used my food processor and it was way easier.***
Blend up the egg, oil, mustard, and salt for about 20 seconds until it’s light yellow and creamy looking. Then, keep your blender on and SLOWLY trickle in your remaining 1 cup of oil. The slower you do this, the thicker and creamier your mayonnaise will be.
Seriously trickle it in at the slowest pace possible. Don’t let any oil accumulate before it mixes in. You need to do this to make sure the mayo emulsifies properly.
Once all your oil is in, you should have gorgeous white, creamy, mayo. Now, add in your lemon juice.
And you’re done!!! Lick the bowl clean. (I did).
Since I had all this delicious mayonnaise, I thought I would make chicken salad with it.
Here’s my trick for making the best chicken salad ever: Use a rotisserie chicken. I don’t know why it makes it SO MUCH BETTER, but it does. I’ve made it with regular chicken breasts and it’s just okay.
Whole30 Chicken Salad
(really the only reason this is whole30 is because I made the mayonnaise myself 😉 )
Also- it’s really hard to take a good picture of chicken salad..
Ingredients:
- 1 rotisserie chicken- skinned and shredded
- 1/2 cup mayonnaise
- 2 stalks celery chopped
- 3 TBS parsley chopped
- 2 TBS chopped green onion
- 1 cup red grapes, halved.
Directions:
Mix all the ingredients together in a bowl. Add more mayonnaise if you want it creamier. Add salt and pepper until it tastes perfect. Devour.

Hey Andrea!
Thanks for all the great info and inspiration. I was wondering which vitamix you would recommend getting? I am about to move back to America after 5 years overseas, and will be busy retaking prereqs and accumulating hands-on hours in order to be ready to submit my PA school apps in September. I think healthy eating is gonna be my key to success. Do you ever make nut butters, could you do that with your Vitamix if you wanted? I’ve read about the dry blade vs wet blade, and the option to use the Vitamix to actually heat things (like soup) up.
What’s your experience?

My fiance and I are on day 6 of our first Whole30. Today we made homemade mayo for the first time and subsequently made this chicken salad. We have only tried it so far, as it’s for work lunches, but damn that is delicious!! I used a rotisserie chicken under your advisement and my only complaint is that it is rather gross to pull one of those things apart. I had refrigerated the whole thing and THEN pulled it apart but I suspect it would have been less gross to shred it while warm, then refrigerate before making the salad! That was my own fault though–just thought I’d let that be known in case someone else is wondering this in the future!
Thanks so much for the recipe–two satisfied thumbs up!

So glad you liked the recipe! Yes- sometimes those rotisserie chickens can be kind of gross! I’ve also found that roasting a chicken in the crockpot is an easy way to cook it- and so yummy!!

Be careful with rotisserie chickens, unless you rotisserie it yourself most supermarket birds contain Carageenan, which is a deal breaker for Whole30. I made that mistake myself, but luckily it was on day 2 so the restart wasn’t an issue.

I didn’t even think about that! I hope my chicken didn’t have Carrageenan but if it did… whoops!!!

I loved this recipe. I grilled several chicken breast instead of using rotisserie and seasoned with olive oil, salt and pepper. Amazing. Thank for this great recipe. It’s a keeper.

This is most delish! LOVE the Whole 30 mayo recipe, and if you want to kick it up a notch, try adding an avocado to your mayo – dreamy creamy!
Andrea Tooley says
That would be wonderful!!! Anything with avocado is good by me!
