One of the big recipes touted by the Whole30 is homemade mayonnaise.
I’ve never really been a huge mayonnaise fan, although I don’t mind it in small quantities on sandwiches or in salads like tuna or egg salad.
But, since everyone who has Whole30’d and made mayonnaise raves about it, I thought I would give it a try.
I followed the recipe on the Whole30 website to the tee.
And my verdict?
Holy mayonnaise! This stuff is GOOD!!! I could eat it straight with a spoon!! And I never would have said that about regular mayonnaise.
- 1 egg
- 1 and 1/4 cup oil, divided *******the type of oil you use is important. DO NOT use extra virgin olive oil. It has too strong a flavor. Use safflower oil, sunflower oil, or extra-light olive oil.
- 1/2 tsp mustard powder
- 1/2 tsp salt
- 1/2 lemon juiced
Make sure all your ingredients are room temp. If your egg isn’t at room temp and you don’t want to wait, you can put it in a cup of warm water for 3 minutes.
Put your egg, 1/4 cup oil, mustard powder, and salt in a blender or in a bowl if you’re going to use an immersion blender, or in a food processor.
I used this kind of oil and it was pretty darn good!
***I’ve made this twice now- the first time I used my Vitamix and it was hard. The second time I used my food processor and it was way easier.***
Blend up the egg, oil, mustard, and salt for about 20 seconds until it’s light yellow and creamy looking. Then, keep your blender on and SLOWLY trickle in your remaining 1 cup of oil. The slower you do this, the thicker and creamier your mayonnaise will be.
Seriously trickle it in at the slowest pace possible. Don’t let any oil accumulate before it mixes in. You need to do this to make sure the mayo emulsifies properly.
Once all your oil is in, you should have gorgeous white, creamy, mayo. Now, add in your lemon juice.
And you’re done!!! Lick the bowl clean. (I did).
Since I had all this delicious mayonnaise, I thought I would make chicken salad with it.
Here’s my trick for making the best chicken salad ever: Use a rotisserie chicken. I don’t know why it makes it SO MUCH BETTER, but it does. I’ve made it with regular chicken breasts and it’s just okay.
Whole30 Chicken Salad
(really the only reason this is whole30 is because I made the mayonnaise myself 😉 )
Also- it’s really hard to take a good picture of chicken salad..
- 1 rotisserie chicken- skinned and shredded
- 1/2 cup mayonnaise
- 2 stalks celery chopped
- 3 TBS parsley chopped
- 2 TBS chopped green onion
- 1 cup red grapes, halved.
Mix all the ingredients together in a bowl. Add more mayonnaise if you want it creamier. Add salt and pepper until it tastes perfect. Devour.
