I’ve got the perfect make ahead meal for you. You can make a HUGE batch of this, and eat it all week! Because that’s what I’ve been doing all week 🙂
It’s also a super easy recipe because you can tailor it to your liking- add whichever veggies you like, any protein you prefer, really anything!!
I’ve made fried rice before with cauliflower instead of rice, which was also delicious!
But this one I made with a new rice blend that caught my eye at the grocery store last week.
Healthy Chicken Fried Rice
- 8 servings of rice, your choice of white, brown, or any blend.
- 1 onion, chopped
- 5 large carrots, chopped (keep the skin on because it’s the part with the most nutrients!!)
- 4 large celery stalks, chopped
- 1 large head of broccoli chopped
- 4 cups of spinach
- 4 chicken breasts
- 1/4 cup soy sauce
- 2 TBS olive oil (sesame oil would also be REALLY good, but I didn’t have any on hand)
- Salt and pepper to taste
- 1 cup teriyaki sauce (I found this at the grocery and it looked good!)
Wash and chop all your veggies. Add 1 TBS oil to a sauté pan on medium heat and add onions. Salt your onions to help them cook and stir them occasionally until translucent.
You can blanch your other veggies quickly to cook them a little bit before adding them to the stir fry, or you can microwave them in a glass bowl for a few minutes- that’s what I did. Then add carrots, broccoli, and celery to your sauté pan and continue to cook. Add in 1/4 cup soy sauce and stir.
Meanwhile, cook your rice according to the directions specific to the type of rice you choose.
Next, heat 1 TBS oil in another skillet and add chicken breast. Generously salt and pepper your chicken and cook until thoroughly cooked, about 10 minutes, flipping the chicken halfway through.
When your chicken is done, let it cool for a few minutes and then chop it up into bite sized pieces.
Combine rice, veggies, and chicken into one large pan. Turn up the heat to medium-high. Add in 1 cup of teriyaki sauce and stir through.
**If your pan is big enough, you can stir-fry 4 or 5 eggs into the entire batch. I think eggs are the best part of stir-fries! But, if you don’t have a huge pan (I didn’t) you can add in the eggs one at a time as you eat the stir-fry each day. That’s what I’ve been doing.
