Hi guys! I titled this post “I’m So Tired!” but really I was just tired yesterday. I am feeling much better today after a good night’s sleep last night.
The weekend was a whirlwind of packing up tons of our furniture and driving it home to our parents house. We are still pending on the sale of our house, so it’s hard to know how much moving out we should do, but at least we moved some big furniture.
Even with driving the 3.5 hours home on Friday and then back to Indianapolis on Saturday, I didn’t miss any yoga classes! I did lots of errand running on Sunday and went to a yoga class with Kyle.
Yesterday, I felt tired. Really tired. I woke up and thought a big breakfast would get me going, so I made protein pancakes.
I used Vega vanilla protein powder, which is a plant-based protein, so that’s why the pancakes are green. I mixed the protein with a splash of egg whites, 1 tbs coconut flour (seriously try this- it makes the texture of your pancakes so much better!), and some almond milk until it was thin enough to pour into the pan. I topped the pancakes with a little coconut oil and cacao mixed together and strawberries on top- healthy chocolate covered strawberry pancakes! In your face IHOP!!
After getting some work done at home, Kyle and I took a trip to the post office. Kyle is selling all our belongings on Ebay so that we have less stuff to move. It’s so funny what people will buy.
For lunch, I tried something new! This black bean spaghetti caught my eye at the grocery store a few weeks ago.
The nutrition facts are amazing! And the ingredients? Only black beans. I had to try it.
After boiling the pasta I became quite confused. Maybe you can help me. The serving size says 2 oz and there are 4 servings in the package. Does that mean 2 oz measured dry? Because after it was cooked it made SO MUCH! There are probably 12 2oz servings of cooked pasta for sure.
I topped the noodles with a tiny bit of butter, salt and pepper and ate them with tilapia and veggies.
The verdict? DELICIOUS! Seriously they taste like regular pasta noodles. The texture is great (I can’t get on board with the texture of other “fake” pastas like that pasta zero stuff). The only problem is, I think they might have upset my stomach. I’ve felt a little queasy ever since but I’m not blaming the pasta yet.
Anyway, if you see this stuff out at the store, give it a try!!
After lunch I headed to the gym to do a little cardio and had full intentions of going to yoga after.
I read my new book while on the elliptical for 45 minutes, but that’s all I had in me. I just felt so tired!
I left the gym feeling blah and drove home to see if Kyle wanted to go to yoga.
Once I was home I couldn’t muster the energy to go to yoga, so I called it a night. Oh well. I was too tired to even make dinner! I ate greek yogurt with peanut butter and honey while sitting on our kitchen counter watching Kyle cook his dinner .
