Super quick post today because I am off to school for a few meetings, working on my research project, and then Kyle and I are headed to the courthouse to get our marriage license!! Woo hoo!!!
I just wanted to share this salad that I made the other day because it was so delicious and really hit the spot!
Greek Salad with Grilled Shrimp
- 1/2 lb peeled raw shrimp
- garlic powder
- romaine lettuce
- grape tomatos
- kalamata olives (seeded)
- feta cheese
- greek dressing of your choice
Heat 1 tbs olive oil in a sauté pan over med-high heat. When oil is hot, add shrimp. Season with salt, pepper, and garlic powder. Turn shrimp after 2 minutes. Continue cooking 2-3 more minutes until all shrimp are pink and starting to brown on each side.
Meanwhile, chop cucumbers, lettuce, and avocado. Add all salad ingredients to your bowl, top with shrimp, and drizzle dressing of your choice on top. I used Annie’s Balsamic and it was perfect!
