Yesterday was my day off from the emergency room and now I start 5 days in a row of all night shifts… boo.
To prepare for my circadian rhythm being completely thrown for a loop this week, I made lots of healthy food yesterday! I have always cooked a big dish or two per week so that I can eat it all week, but lately I’ve been slacking on pre-portioning things out. I just keep the whole pot/pan in the fridge. But packing a lunch each morning (or evening depending on my shift schedule) really takes some time! I’ve found that over the past week I’ve spent at least 10 minutes each day putting food into tupperware to take to the hospital. I made it my goal yesterday to separate things out better so that I can just grab and go this week.
I made crockpot chicken, cabbage and onions sautéed, steak, and this awesome egg bake.
A quiche caught my eye earlier this week and I thought I should try to create a healthy version! After looking around on the web, I found a recipe that looked amazing on Against All Grain, a healthy paleo site. The “quiche” used sweet potato as the crust and looked more like a fritata to me.
I lightened the recipe up a little bit by using 5 whole eggs and 5 egg whites instead of 10 whole eggs. Also, I used turkey sausage instead of regular sausage.
It turned out amazing!!! So tasty and easy to cut into squares to grab on the go!
Sweet Potato Turkey Sausage Egg Bake
- 1 large sweet potato
- 1/2 lb turkey sausage, casing removed and crumbled
- 5 whole eggs
- 5 egg whites (or 1 cup liquid egg whites)
- Salt and pepper
- Splash of milk (I used skim but the original recipe called for coconut milk)
- Salt and pepper
Preheat oven to 350F. Spray a baking dish with cooking spray or olive oil. Slice sweet potato into thin slices, about 1/8 inch thick.
Line bottom of baking dish with sweet potatoes. You can make them overlap a bit.
Cover sweet potatoes with sausage. I bought 3 sausages from the deli at Fresh Market. They were “white wine and herb” flavored. I actually think they made the whole dish. If you buy plain sausage, I might recommend adding in some herbs of your own. Rosemary would be good!
In a medium bowl, whisk eggs and egg whites, a slash of milk, salt, and pepper. Pour egg mixture over sausage.
Bake 25-30 minutes.
After spending a good deal of the day in the kitchen, I hopped on my treadmill for a sweaty 4 mile run while watching Parenthood. I am so in love with this show!! I’m not caught up on this season though, so don’t give anything away please!!!
