Is there a healthy ingredient you are scared to use? For me, it’s definitely kale. I LOVE putting it in my smoothies and juice, but I have this fear of using it in any other way! I guess I just assume it will be flavorless and hard to eat if I cook it or use it raw in a salad.
The few times I’ve tried to make kale chips they’ve been only okay. Whenever I buy a pre-made salad with kale it’s again- only okay.
Every time I pass it in the grocery store, I sigh… wouldn’t it be nice to have a big kale salad that actually tastes good?
Well- I have crossed over to the I love kale side of the world and have a recipe for anyone else sitting on the fence about kale! And for all you kale lovers who are out there rolling your eyes at me, I’m sorry it took me so long to figure it out.
Holiday Kale Salad (any day should be a holiday!) The original recipe is from Mind Body Green, but I tweaked it a little bit.
- 4 big bunches of Dino kale (I think the dino is a little easier to eat than the curly type)
- 1/2 tsp sea salt
- 1 avocado
- 2 green apples
- 1 cup pistachio nuts (the original recipe used pumpkin seeds which would be excellent as well)
- 1/2 red onion chopped into tiny pieces
- 1 huge lemon or 2 small lemons
- 5 tbs honey
Chop and wash your kale. Try to avoid using too many of the stems- they are much more bitter than the leaves.
Add salt to your kale leave. Gently massage and squeeze the leaves until they soften. Continue to do this for a few minutes until the kale wilts and reduces in size. ***THIS IS THE TRICK TO MAKING AN AWESOME SALAD! Once you massage the leaves, they will be soft and much more edible than plain, raw kale.
Chop your apples, onions, and avocados and add to the salad.
Whisk together lemon juice and honey. Pour over salad.
There you go!!
I’ve been eating this salad twice a day for 3 days now… so good! I love that the dressing doesn’t have oil- it’s just honey and lemon juice. So I can add even more avocado and not feel bad about it. Yesterday I had a piece of Ezekiel toast on the side and piled some of the salad onto the bread for some super yummy bites.
