It’s getting pretty hectic with the end of the month right around the corner. I want to submit my application for residency in about a week- yikes! That means I’m solidifying letters of recommendation, editing my application, getting my transcripts in, etc.
I’m doing that on top of organizing all the exciting new things going on with our community eye clinic. We intend to open the clinic in the fall, so it’s busy busy working all that out!
And lastly, I’m still obsessed with the rotation I’m on, and so I really want to study for it! Therefore, my blog posts might be a little sparse in the next few weeks.
But for today, I will leave you with a new recipe I tried, and a new workout I just started!!
Recipe: Tofu Scramble
I’ve heard of tons of people eating tofu scrambles, but I had never tried one until just a few weeks ago! I attempted to make it myself and let me tell you, it’s easy and SUPER tasty!!
- I package organic firm tofu, drained with water pressed out
- 1 bell pepper- chopped
- 1 zucchini- chopped
- 1/4 cup soy sauce
- 1 tbs nutritional yeast
- 1 tbs garlic powder
- 1/4 cup green onions chopped
- seasonings of your choice- Mrs. Dash works wonders!
In a bowl, crumble tofu up into scrambled egg looking pieces. Stir in soy sauce, nutritional yeast, and seasonings.
Chop your veggies into small pieces.
Add veggies to the pan! But don’t add green onions yet. Sauté until they soften- 3-5 minutes.
Add tofu and green onions to the pan and cook over medium high heat, stirring occasionally until the tofu starts to brown. Another 5-7 minutes.
New Workout- The Ultimate Yogi
With my ankle bothering me on and off, and little twinges of back and knee pain every now and then, my body has been craving some yoga. But I never seem to be able to drag myself down to the yoga studio, so I bit the bullet and bought an awesome new yoga DVD set.
This set is intense! It’s a 108 day program with 9 or 10 different yoga workouts.
I started with this one yesterday- cross training.
It was actually SUPER similar to the vinyassa flow I do at the studio near my house. So I loved it!
Every other day, you add on this 15 minute core workout.
The schedule calls for yoga every single day for 108 days. The program also recommends cleaning up your diet and starting a meditation practice- all good things I could do more of.
So I’m sold!
