When life gives you snow, make a snowman!
My hometown got close to 9 inches of snow yesterday, keeping us all bundled up inside, away from work. Kyle didn’t have to go to work and I… well, I’m on vacation so I didn’t have to do anything. After a 3 hour nap I was feeling kinda antsy and wanted to get outside and play in the glorious snow.
So we did!!
It was perfect snow to pack and build a snowman.
It wasn’t even that cold!
Since Kyle has a splint on his hand (he tried to cut his thumb off a few weeks ago… long story) I did most of the work 😉
We had some leftover smoked salmon from christmas dinner and I was feeling eggs, so I shredded up the salmon and scrambled it with 2 egg whites. The smokey salmon flavor is basically to die for. Why don’t we eat this all the time?
On the side I had the rest of our Christmas salad- baby spring greens, cabbage, carrots, and pomegranate arils.
I’ve been feeling really sluggish lately… probably due to the fact that my diet has consisted of cookies and gummy bears for the past 3 days 😉 I really didn’t feel like doing too much yesterday, so I got my bootie on the treadmill and did 25 minutes of sprints. That was enough for me.
