Yesterday ended on a great note- thank goodness! After that craziness, I was ready for a relaxing night. Today, I’m looking forward to my first day at the outpatient clinic. But, I think the best part of today will be my yummy eats for the day! For starters, I picked up some Love Grown Granola this past weekend to see what all the hype was about. I must say- it is killer granola. It’s so crunchy that you only need a tiny bit sprinkled on top of your smoothie or oatmeal to add that great texture. But don’t be surprised if you find yourself going back for bowls number 2 and 3!
My next recipe was so easy to make and has been satisfying my pizza craving all weekend. These little bites pack in veggies and protein without any of the unwanted carbs and fat from pizza.
Healthy Pizza Bites
1 head cauliflower (about 3-4 cups shredded)
2 cups cottage cheese
1/2 cups egg whites
1 1/2 TBS garlic powder
1 1/2 tsp oregano
sprinkle of red pepper flakes to your desired level of spice
Preheat oven to 450 F. Spray muffin tins with non-stick cooking spray.
In a food processor, pulse cauliflower until it becomes a rice texture.
Transfer cauliflower to a saute pan and cook on medium heat until translucent (about 5-8 minutes). Let cool.
Add remaining ingredients to food processor and mix until smooth.
Stir cottage cheese mixture into cauliflower.
Press mixture down into muffin tins. Bake until edges are crispy, about 20-30 minutes depending on your oven.
