Yesterday, I gave my first injection and I got to draw blood for the first time! Whoop!
But let’s go back to the main part of this post: Protein Pancakes
This is the best recipe for a quick snack, meal, sweet craving, carb craving, basically anything…
Step 1. Grab your favorite protein powder. I actually think Perfect Fit protein makes the best pancakes ever. I don’t like this protein AT ALL for a smoothie- it’s super gritty and I don’t really care for the taste. But it makes the best
pancakes ever. I also love using Whole Foods protein because it’s cheap, sweetened with stevia, and doesn’t have too many ingredients. The chocolate flavor is the bomb.
Step 2. Add liquid egg whites (most of the time I add about 2/3 cup)
Step 3. Add anything else you want- mashed up bananas, greek yogurt, almond milk, coconut extract, cinnamon- the world is your oyster… or pancake 🙂
Step 4. Pour the batter (it will be very liquid-y) into a pan sprayed with non-stick spray
Step 5. Add blueberries because blueberries are amazing and should be added to anything and everything. You can add them to the batter before you pour, but I find that they end up clumping toward the middle, so I sprinkle them on top after I pour the batter to ensure an even distribution of blueberry perfection in every bite.
Step 6. Flip the pancake once the top is no longer runny. The pancake will take up the entire pan, so it can be a challenge to flip. If you end up making a protein scramble, don’t fret!! It is still JUST as delicious I promise.
Step 7. EAT!! Top with almond butter, peanut butter, honey, or nothing- and scarf it down. OR fold it up and put it into a tupperware for later. These pancakes are good hot, cold, or in-between.
After an amazing day at the hospital I came home and was feeling super snacky. So I snacked! I finally dragged myself away from the cupboards and off to the gym.
Today was my least favorite gym day: Leg day
I completed 3 sets of barbell squats and then 3 sets of leg raises on the captain chair. Then I moved on to dumbbell plie squats, lateral barbell squats, and step-ups holding dumbbells. I did each of those exercises 10 times each x 3 sets. Then I completed 3 sets of walking lunges holding 2 25lb dumbbells, and some calf raises. Woo!
I finished up my workout with 10 minutes on the stair machine just to make sure my legs didn’t have anything left 😉
Finally it was time to go home and get to bed. Friday is going to be a big day- I’m rushing off to the airport as soon as I get out of clinic and heading to Florida!
