Get ready for the most delicious recipe EVER!!
These little bites of joy definitely saved me today. As I was driving home from my parents house to Indianapolis, I suddenly got a huge craving for something sweet. At first I thought I might stop at McDonald’s and get a vanilla ice-cream cone. Then I thought I might stop in Indianapolis for frozen yogurt. Then I thought I could get myself a cookie or something at Starbucks…
All those options were tempting, but I knew I would feel gross and guilty after having something artificially sweetened and processed.
Finally, the perfect solution dawned on me! I could make my healthy almond joys, and put one on top of a banana smoothie- perfect summer treat without the guilt.
1 cup oats lightly processed in a food processor or blender (just pulse them for a few seconds so they aren’t whole oats, but aren’t quite a flour either)
1 scoop chocolate protein powder (I like Whole Foods)
2 TBS unsweetened cocoa powder
1 TBS stevia
1/2 cup unsweetened coconut
3 TBS Coconut Oil
Splash of almond milk
In a bowl, combine the dry ingredients and mix until fully incorporated.
Add in the coconut oil and stir until the mixture forms pebbles.
Add a splash of almond milk and stir until a sticky dough forms.
Don’t worry if the dough seems too sticky- when you put it in the refrigerator, the coconut oil will solidify and hold the ball together.
Form a ball of dough with your hands, stick an almond on top, and refrigerate!
I promise, these will not let you down!!
I bet you could make a similar ball with peanut butter or almond butter instead of coconut oil. You could even add different flavorings like cinnamon, vanilla extract, (use vanilla protein powder not chocolate in this case), almond extract, whatever your heart desires!
