It’s good to be back! Let’t start with a recap of my quick trip to Florida. Kyle and I flew down on Friday night and my dad picked us up from the airport around midnight. We went straight to bed because Saturday was going to be a big day. Saturday morning I woke up early to get in a quick run to the beach and back. The entire weekend was cloudy and overcast due to the tropical storm forming in the gulf. Any time I spend on the beach always recharges me, so despite the clouds, I felt like a new woman. There is something about the palm trees, the salty-air, and the wind with little pieces of sand that sting your legs that says home to me. I lived in Sarasota, Florida until I was 15 and even though Indianapolis has become my home, Florida will always have a special place in my heart.
After my run, my dad had the best surprise for me. He has been reading the blog and decided to buy all the ingredients for us to make protein pancakes!! He seriously went out and bought protein powder, egg whites, almond milk, greek yogurt, blueberries, strawberries- all the breakfast essentials. It was so sweet. So I got to work in the kitchen making protein pancakes for everyone!
**Side note- I usually buy the Whole Foods Whey protein. My dad bought the Soy protein from Whole Foods to try and just as an FYI- it is not nearly as sweet as the whey type. I think our pancakes would have been better with some honey on top or stevia mixed in.
Post breakfast, Kyle, Dad, and I got ready and hit the road for Naples. We had a family reunion with my 2 aunts, my cousin, and my grandma. The whole day was wonderful. My aunts live in California and New York so it was great to get a chance to see them.
We ended the day with a great dinner- just my Dad, Kyle, and me. Kyle and I flew out of Sarasota at 6am Sunday, so the trip really was a whirlwind.
Once I was home from the airport on Sunday, it was time to get to work- laundry, grocery shopping, food prep for the week, showering, studying, blogging, watching trashy reality tv…. my priorities are in line I promise.
I wanted to write a little bit about food prep. I started making food in bulk about a year ago. Every Sunday, I make 2 or 3 dishes that will last me all week. This habit I’ve formed every Sunday has made a big difference in my weekly time management. If you already have meals prepared, it is easier to eat healthy, bring your meals to work, and not eat out. Also, by the end of the week (usually around Thursday) you get sick of eating the same thing and it’s super fun to start dreaming about what you will make the next week…. weird I know.
This week I decided to make my favorite summer salsa. It’s a mixture of red, yellow, and green bell peppers, tomatoes, corn, red onion, black beans, black eyed peas, and avocado. I baked some chicken breast to top the salsa.
3 bell peppers- one red, one yellow, one green
1 large tomato
1/2 red onion
1 can corn
1 can black beans
1 can black eyed peas
1 can diced tomatos
3 TBS Italian dressing
Chop the peppers and tomatoes and add to a large bowl. Chop the red onion into much smaller pieces (unless you like big pieces of onion- I don’t). Add to the bowl. Drain and rinse cans of black beans, corn, and black eyed peas. Add to bowl. Add canned diced tomatoes with their juice (if you think it looks too juicy, you can drain some off). Finally, add italian dressing for a little zing. Mix well.
The longer this sits in the refrigerator, the better it gets! Don’t add the avocado until you are ready to serve.
The next dish I made for the week was turkey burgers. I wouldn’t really call this a recipe. I just bought 1 lb ground lean turkey breast and mixed it with chopped garlic (3 cloves), about 6 very large leaves of fresh basil, 2 egg whites to hold it all together, and some salt and pepper.
Form into patties and bake on a cookie sheet for 25 minutes at 350 degrees. I plan on eating these yummy burgers on top of a salad.
For a quick snack, I hardboiled some eggs.
Lastly, I cut up a massive watermelon. Hopefully that lasts me more than 2 days… but knowing me, I will eat half of it tonight.
